Wines to pair with bacalao

You will find here some nice tips to pair wine with bacalao, wether you prefer red wine or white wine, and use a lot or just a little bit of chilli.

Bacalao is a stew made with dried and salted cod which can be prepared in various ways. This dish comes originally from Spain, but here in Norway we are mostly familiar with a variant consisting of tomatoes along with potatoes, spices, paprika and olive oil.

What to look for in a wine for bacalao

Bacalao has a rich taste, due to, among others, the salted cod. It is also slightly acidic and fresh because of the tomato. A «classic» bacalao needs an aromatic and fresh wine with a good acidity. In case you are using a lot of chilli, go for a wine that has a little bit of sweetness.

Red or white wine?

Many assume red wine is a must with bacalao. However, choosing a white wine will be just as nice. The acidity found in the dish matches better with a white wine, since they are usually more acidic than red wines. Furthermore, it is easier to find sweet white wines, which is important when having a spicy bacalao.

Inexpensive wines made with Sauvignon Blanc grapes from the New World wine regions (USA, New Zealand, Australia and South Africa) are a good option with bacalao.

Albariño eller Alvarinho

Albariño from Spain or Alvarinho from Portugal might be the two options that better fit the origins of the dish. Albariño/Alvarinho is aromatic and presents a high acidity, while having a more fruit-driven and floral style than Sauvignon Blanc.

Riesling wines

Another excellent choice would be a low-priced Riesling. It presents a high acidity and a good intensity of the aromas, especially the fruity ones. Moreover, Riesling can be found in off-dry styles that pair better with a slightly hot bacalao.

Do you still prefer a red wine?

You can choose red wines with intense aromas, good acidity and low tannins such as: Chianti from the italian region Toscana and wines made from Barbera or Pinot Noir grapes.
